Nordic Tom Collins
  • 1.5 oz of Canopée Hooké Gin
  • 1 oz fresh lemon juice
  • 1 oz of maple syrup
  • Spruce beer
    • Cedar or rosemary sprig and a dehydrated lemon citrus
    • Include all ingredients in a shaker, except for the spruce beer.
    • Add ice cubes and shake vigorously.
    • Strain into a glass filled with ice cubes.
    • Thin with the spruce beer and mix with a spoon.
    • Garnish with a sprig of cedar or rosemary.


    Optional: 1-2 drops of forest bitters
